If you want to use an older version of php, find the MAMP version that supports your desired php version here:
https://www.mamp.info/en/release-notes/
And then download that version for macOS or Windows here:
https://www.mamp.info/en/downloads/
There are many versions that are shown within the release notes but not shown within the downloads, so you will have to do a little bit of digging to find the correct version.
Obviously this comes with the downside of not having new MAMP features, so it depends on what is more important to you.
